Usually the Spring time is pretty calm around our home, which is unusual for our busy family. Becky and I are usually winding down the school year and gearing up for the summer break. However, as the kids are getting older, they are also wanting to do more things. As busy as we are, we encourage it and embrace it. Keeping busy as a family keeps us together longer. It’s more time to bond and more time to grow as a family.
This Spring is definitely one of those times. Time to cheer each other on (Allie usually wears her cheerleader outfit) and then spend some time after the game hanging out at the lake.
In the past years, all three of our boys played soccer. The organization that we play in always made it easy for us. The boys are in three different age groups, but we were always able to select teams that had practices on the same day. That meant three practices in the same area, and all at the same time. This year, Jack (10) wanted to try a new sport, Lacrosse. Ethan (6) still loves playing soccer and doing gymnastics, and Allie (4) is taking a dance class. Yes, three different activities with means different days of the week and all at different locations. So every day, even Saturday and Sundays, are filled with practices or games.
Since we have such a busy schedule, Becky and I need to plan our meals ahead. We really try our best to do meal planning each Saturday for the week. We try to do make meals that are quick, easy and healthy. Now with 6 of us in our family, the hard part is trying to plan meals that everyone likes.
This week we had one that was a spin on our traditional Mexican night. Instead of tacos or chicken quesadillas, we spiced it up a bit and tried something new. We tried a few things from Good Food Made Simple: the Chicken Enchiladas Verdes and Hatch Chili Mac.
