The other night we were out to eat of one of our favorite restaurants, and I had the most perfect crispy grilled asparagus. I am not the type of person that usually picks the same thing over and over again. I really try to mix it up! However, I will be back for this for sure. I like to try new food to eat and look for some inspirations to bring back home. Well… I found this one and I think you will love it too!
I like to try new food to eat and look for some inspirations to bring back home. Well… I found this one and I think you will love it too! I know I’ve said it before, but I love to grill out. I take every opportunity I get to go out and use my grill. I will cook just about anything out there. Everything from burgers to just about any side dish. However, this recipe for crispy grilled asparagus has now moved up to my top 5 favorites! The kids love it (and I have some picky eaters in our group of 6) and it pairs great with just about anything. Here is what you need, along with step-by-step cooking directions.
- 1 bundle of fresh asparagus (approximately 1 lb.)
- 1 Tbsp of oregano
- 1 Tbsp of basil
- 1/2 Tbsp of onion powder
- 1/2 Tbsp of minced garlic
- 1/2 Tbsp of sugar
- 1 tsp of pepper
- 1 tsp of salt
- 1/4 cup of Extra Virgin Olive Oil
Begin by mixing all the ingredients in a bowl (except the asparagus) and set aside. The longer the marinade sits, the more the flavors will mix into the olive oil.
Next, trim the back ends off the asparagus (about 1/4 inch). Add the asparagus to a large pot of boiling water. Cook the asparagus for 5-7 minutes.
After cooked. you will want to blanch the asparagus to stop the cooking process at this point. Do this by removing it from the boiling water and add it to a cold ice bath. and let Let it sit for a few minutes or until the asparagus is completely cool.
The next step is to dry the asparagus. I usually set it on some paper towel and pat it dry. (You will want to remove as much water as possible for when you add the marinade.)
Once dry, put in a large container (I usually use a large zip-lock bag) and add your marinade that you set aside earlier and refrigerate for 30 minutes. After 30 minutes you are ready for the grill!
Pre-heat your grill to 450 degrees. After it is pre-heated, lay the asparagus in a single layer across the grill. I usually cook it for 5-10 minutes. Your cook time will depend on how thick your asparagus is. Keep rotating it on the grill regularly as you do not want it to burn. You will know it is done when it starts to get a little char to it, but not burnt.
I usually like to pair this with a nice piece of fish or with a good Italian meal like Chicken Parmesan.
