Espresso Chocolate Chip Cookies – how can you go wrong with these? I love a good cup of coffee in the morning. I usually run down and turn on this coffee maker as soon as I get up. It is ready to go by the time that I get downstairs.
With that being said, my wife doesn’t really drink it, but she and the kids will eat these cookies when I make them. I found this recipe a while back and have adapted it over the years to be one of my favorites.
INGREDIENTS:
1/2 cup (1 stick) butter, softened
1 cup light brown sugar
3 tablespoons granulated sugar
1 large egg
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons instant espresso coffee powder
1 3/4 cups semisweet chocolate chips
DIRECTIONS:
Preheat the oven to 350. Line two baking sheets with parchment paper and set aside until you are ready for them.
Beat the butter until fluffy. Add sugar and beat until well mixed (about 30 seconds). Add in the egg and the vanilla (beat for another 30 seconds).
In a separate bowl, combine dry ingredients. When combined, dump them, slowly, into the larger bowl. Mix until combined (again- about 30 seconds on slow)
Drop by spoonful (about 1 1/2 or 2 Tablespoons of dough is the best size for a cookie) about 3-4 inches apart.
I like to sprinkle a few more chocolate chips on top (well- I push them into the top of the cookie). Our kids love to eat them this way, too.
Bake for 10-14 minutes, until the cookie is done. Let cool for 5 minutes.

When we make cookies, which seems like a daily thing anymore, we usually freeze the dough or keep it in the fridge. Sometimes we may bake one cookie for each of our four kids to have as an after-dinner snack.
